Thanksgiving is my second favorite holiday, second only to Easter. I love having a day dedicated to praising God for all of His gifts, although that should be our attitude year round. It seems like the older I get, the more I realize how truly blessed I am. Compassion International recently had an article in their magazine about their 1 millionth sponsored child named Fellow. This sweet little boy from Africa does not have a mother and attends school with a plastic bag as a book bag. It may have been my pregnancy, but this brought tears to my eyes. We are truly so blessed! May we be truly thankful for all the gifts we have from the Good Lord!
So now, onto the food! Here is our menu from Thanksgiving dinner:

Oven Roasted Turkey with Sage Butter
Mashed Potatoes
Smashed Sweet Potatoes
Turkey Gravy
Brussel Sprouts with Bacon
Green Bean Casserole
Cranberry Fruit Conserve
Caramelized Onion and Cornbread Dressing
Yeast Rolls
My personal favorite is the caramelized onion and cornbread dressing. I’ve done dressing the traditional way with french bread, leeks and onions but once I was introduced to the sweetness of cornbread dressing, there was no going back for me. The Southerners got it right with the cornbread dressing! The meal was delicious and even better the second day.
>i truly missed having this meal….maybe you can make it for me next time i go to CO?
