Summer Entertaining

Ah, summer.  My favorite season.  I long for summer all year long and the season is especially glorious where I live.  You could spend most of the day outside with warm sunshine, no humidity and a cool breeze.

Grilling in the summertime is pretty much a given and it is such an easy way to entertain.  We had company over for dinner and this menu was very effortless to put together especially since the two side dishes took about 15 minutes to prepare and only 15 minutes to cook.  My husband grilled chicken that was delectable and I served creamed corn with jalapenos and lemon-parsley asparagus.  Our company brought fruit salad and strawberry shortcake for dessert.  A wonderful summer meal!

Creamed Corn with Jalapenos

  • 2 tablespoons butter
  • 1 shallot, minced
  • 1 jalapeno, minced (discard seeds for less heat)
  • 2 10-ounce bags corn kernels
  • 1/2 cup heavy cream
  • 1/3 cup water
  • 2 ounces Monterey Jack cheese, grated (I used Cheddar)
  • 1/2 teaspoon salt
  1. Melt butter in a heated large straight-sided skillet over medium heat. Add shallot and jalapeno. Saute for 2 minutes.
  2. Puree 1/2 bag of corn in food processor or blender. Add pureed corn and remaining frozen corn to pan. Add cream, water, and cheese. Stir and cook until cheese is melted, about 2 to 3 minutes. Season with salt and serve warm.

Lemon-Parsley Asparagus

  • 2 bunches asparagus
  • 1/2 cup chopped parsley
  • zest of one lemon
  • 1 tablespoon lemon juice
  • 2 tablespoons olive oil
  • 1 minced garlic clove
  • salt and pepper

Boil asparagus for 4 to 5 minutes; drain. Mix parsley, lemon zest, lemon juice, garlic clove, olive oil, and salt and pepper in a bowl. Drizzle the asparagus with olive oil and top with the parsley mixture.

    My fav throw on the grill item has less to do with the culinary quotient and more to do with the great memories associated with a grill overflowing with brats. If brats are grilling family and friends are gathered, cameras in tow, to celebrate or honor someone or something special like the 4th of July, Father’s Day, a birthday or the Super Bowl.

    My favorite to grill is shish ka bobs. I like to marinate the meat during the day (Chicken in an easy Italian dressing marinade or steak in a honey/soy marinade). Chop up some colorful peppers, onions, MUSHROOMS (my favorite) and a definite must- pineapple! Delish! Oh, and the best part is the left overs (minus the ‘rooms and pineapple) are great for making fajitas the next day!

    I love grilled veggies! Peppers & onions, corn on the cob, potatoes… pretty much any vegetable is better grilled. I usually coat them with a little olive oil and season with salt and pepper. They’re great straight off the grill or added into pasta, put on a burger or sandwich and in fajitas. Grilled fruit is pretty great, too 🙂

    One of my favorite things to grill is portabello mushrooms. Drizzled with olive oil and lots of fresh minced garlic. Great substitute for a burger on those “veggie” days! 🙂

    I’m a simple Texas girl…I love burgers on the grill! Adding extra seasonings to jazz them them is ok, too. We’re trying your Turkey Burger recipe tonight. ☺

  8. Yum. From the grill i really like chicken and burgers. Add parmesan to the burger meat for an italian taste that will blow you away! Yummm….

    A medium rare steak is my favorite food, but I do know one great marinade when you grill chicken and pork chops . . . equal parts catalina dressing, olive oil, worcestershire sauce, and frank’s red hot sauce. It is tangy and delicious! You have to marinade for minimum of 24 hrs and then add provolone cheese after grilling.

    Twinkies! Marinate in sweetened condensed milk & maple syrup, grill until golden brown, then top with m&m’s and powdered sugar to serve! Just kidding, of course…but since the drawing is random, there’s no pressure to come up with something profound enough to impress you, who’s such a great cook! 🙂 Love you, Susy!
